Moist, warmly spiced pumpkin bars made in one bowl with no oil, no butter, and no refined sugar, finished with cream cheese and Greek yogurt frosting.

Ingredients

Scale
  • 1 large egg
  • ¾ cup (180 g) pumpkin puree
  • ⅓ cup (105 g) maple syrup or honey
  • ⅓ cup (80 g) almond butter or peanut butter
  • 1 tsp vanilla extract
  • 1 ⅓ cup (160 g) whole-wheat flour
  • ⅔ cup (65 g) almond flour
  • 2 tsp baking powder
  • ⅙ tsp salt
  • 1 tsp ground cinnamon
  • ⅙ tsp ground nutmeg
  • ⅙ tsp ground ginger
  • ⅙ tsp ground cloves
  • ¼ cup (60 g) cream cheese, low fat or full fat
  • ¼ cup (60 g) Greek yogurt
  • 3 tbsp maple syrup, with more if a sweeter frosting is desired
  • ½ tsp vanilla extract

Instructions

  1. Heat the oven to 350°F (180°C) and line a 7×11-inch (15×25 cm) baking pan with parchment paper.
  2. In a large bowl, add the egg, maple syrup, almond butter, vanilla extract, and salt. Using a whisk or fork, lightly beat the egg until the mixture is smooth.
  3. Add the pumpkin puree and the homemade pumpkin spice mix of cinnamon, nutmeg, ginger, and cloves. Stir until smoothly combined.
  4. Add the whole-wheat flour, almond flour, and baking powder. Using a spatula or fork, stir until the dry ingredients are fully incorporated and the batter is smooth and free of lumps; do not overmix.
  5. Transfer the pumpkin batter to the prepared baking pan and spread it out evenly.
  6. Bake at 350°F (180°C) for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the pumpkin bars to cool completely before frosting. Meanwhile, add the frosting ingredients to a bowl and mix until combined.
  8. Frost the pumpkin bars with the cream cheese frosting, then slice into 12 bars.

Notes

Use 100% pumpkin puree without added sugar or spices; homemade or canned puree works, but do not use pumpkin pie filling., Do not overmix or over-bake the bars, or they can become dry. Keep leftovers in the refrigerator for longer storage and better flavor., Add mix-ins such as chopped walnuts or pecans, dried cranberries, raisins, pumpkin seeds, or dark chocolate chips., For vegan bars, use a flaxseed egg, nondairy cream cheese, and nondairy yogurt. For gluten-free bars, use gluten-free pastry flour, oat flour, or almond flour and check that the baking powder is gluten-free., For dairy-free bars, use nondairy cream cheese and nondairy Greek yogurt. For an almond-flour variation, use just almond flour with keto maple syrup or sugar-free honey. For a protein-powder variation, replace ½ cup (50 g) of flour with vanilla vegan protein powder or vanilla casein., Store cooled frosted or unfrosted bars in an airtight container at room temperature for 1 day or in the refrigerator for up to 4 days. Freeze in a freezer-safe container or individual zipper bags for up to 3 months; reheat in a hot oven for a couple of minutes or in the microwave for 30–40 seconds.
